Training Nutrition - Turmeric Eggs
Sometimes it can be hard to think what to eat pre-ride, that's tasty, nutritious, and will fuel you for your ride. At NEO, we have tried and tested a new recipe, bombay inspired, that we think really hits the spot, as well as having all the nutrition you need. This can also be a great post ride refuel meal too!
A simple dish, not unlike scrambled eggs, but with a nice twist. For this recipe, we used sourdough, as it was what we had in at the time, but you could use any bread you like for this breakfast classic.
We'd recommend to use the best quality free-range eggs, and a nice ripe tomato.
This recipe has it all. You get the CHO you need from the bread, around 20g protein from you eggs, depending on the size. The magic in this recipe though is the turmeric. Not only does it make it taste great alongside the onion and coriander, but turmeric is a very powerful antioxidant. One study in athletes found that muscle damage and soreness was reduced after intense training, when the subject took daily doses of turmeric powder. If we are completely honest though, we just love the taste!

1. Heat Grill to high
2. Slice and dice that onion like a ninja. Cut tomato into 3 (Too big means longer to grill)
3. Throw onion, chopped coriander, oil, salt into the pan and fry that beautiful mixture
4. After 30sec or so, launch that bread into the toaster, and slap the tomato on the grill
5. Mix your eggs up with some s&p and even some chilli if you like it
6. When the toast arrives on the scene, throw your eggs in the pan with the onion and mix baby
7. The eggs will cook quick, so get that butter on the toast
8. Catapult them eggs onto the toast, slide the tomato out from the grill, and enjoy!
